Put 100 grams of all-purpose flour, 55 grams of water, 5 grams of sugar, and 1 gram of yeast into the cook machine for kneading. When the dough becomes smooth, take it out and arrange it slightly, put it in a large bowl and cover with plastic wrap for fermentation.

A small purple potato is peeled and steamed. Add a little water and put it in a food processor to make a delicate purple potato mash. Add 50 grams of all-purpose flour, add an appropriate amount of purple potato puree, 0.5 grams of yeast, and form a smooth dough. Cover with plastic wrap for fermentation.

Wash a handful of spinach and blanch it in water, then squeeze it in cold water and chop it. Put the spinach in the food processor and add a little water to puree the spinach. Strain the spinach juice and add a little baking soda to the spinach juice. 50 grams of all-purpose flour, 28 grams of spinach juice, about 0.5 grams of yeast and spinach dough, covered with plastic wrap for fermentation.

Divide the fermented white dough into half and add a little red yeast rice powder.

Repeatedly knead the red yeast rice powder evenly into the dough to form a pink dough.

Divide each color dough into 20g small doses (I only used a part of the dough), knead and let it rest for a few minutes after exhausting.

Then take the two colors of dough and knead them into strips.

Tangle the two long strips together.

Roll up from one end and press the tail underneath.

The finished green lollipops undergo secondary fermentation for about 20 minutes.

Then put cold water into the pot, turn the pot to medium heat and steam for 15 minutes after high heat, and take out 5 minutes after turning off the heat.

Tips:
1. When the purple potato is pureed, the water added is different, so add proper amount of noodles depending on your own situation.
2. The colors can be matched at will, or three colors can be matched together.
3. The water absorption of each brand of flour is different, so add water as appropriate.
