Tips:
1. The hot cooked starch gelatinizes and can absorb more water, which is the reason for the expansion of the puffs, so the flour must be cooked;
2. The eggs should be added to the batter in batches so that the puff dough is used to pick up the batter with a wooden spoon. The batter is in an inverted triangle shape, which is best;
3. The temperature and time of the puff baking are also very important. The high temperature 200 degrees first makes the puff dough expand; after it is set, use 170 degrees to dry the moisture of the puff, so that the puff will not collapse after it is out of the oven. Go down
