Weigh and prepare all materials.

Put the eggs, sugar, and brown sugar in the egg beater.

Beat on high speed until the color becomes lighter and thicker, about 3-5 minutes.

Sift in a mixture of flour, salt and baking powder three times.

Stir the egg batter evenly.

Melt the butter over a low heat, add a quarter of the egg batter, stir and blend it into the butter batter.

Pour the butter batter into the egg batter and mix well. Cover with plastic wrap and refrigerate for 1 hour.

Put it in the oven, bake for 9-11 minutes at 190 degrees, and the edges will start to brown. Take it out.

Tips:
1. The unused Madeleine paste can be kept in the refrigerator for about 3 days, and it will taste better when it is baked and eaten.
2. It can be matched with any jam you like. I use strawberry jam made by myself. I like jams that can eat large pieces of fruit~
3. Madeleine with coffee or black tea is more classic, because it is sweeter, so you can appropriately reduce the amount of sugar.
