Last time steamed buns left a lump of noodles about 45 grams

The old noodles left behind have been fermented for a day

Put the old noodles into the bucket of the bread machine, (I left the old noodles in the morning at around ten o'clock in the evening to ferment the noodles, and prepare for the steamed buns tomorrow morning)

Add 80 grams of water

Add 200 grams of flour

Put the dough in the bread machine for 18 minutes (the same as if there is no bread machine by hand)

Put the combined noodles in a large basin, cover with a damp cloth wrung out, ferment, and wait overnight...

Wake up in the morning to see that the dough is good 😄

Take out the dough and press a hole in the middle, put in 0.5 g of soda noodles, use a little water to dissolve the soda noodles (must be ready), put it into the pressed hole, knead hard (exhaust) and add three Spoon sugar, (if sticky hands, add some flour appropriately, don't stick to your hands, then knead hard to soften the dough

Divide the kneaded dough into two, then shape it into a rectangular parallelepiped, cut it into a bun shape with a cutter, and leave the head and tail part to make old noodles😁

Put it in a steamer, steam in a pot under cold water for 20 minutes, cut it and steam it in the pot directly, without placing it for fermentation, the effect is the same, but it must be in a pot under cold water.

Tips:
1⃣️The remaining old noodles can be eaten within one week in the refrigerator
2⃣️Don’t put too much alkali, put too much steamed bun yellow, put less steamed bun sour, put it properly,
3⃣️Alkali must be kneaded evenly, otherwise the steamed buns will have yellow spots
4⃣️The amount of sugar added according to personal taste, or no sugar.
