Air Fryer Version Passion Fruit Cake

The raw materials are ready, and then two water- and oil-free basins are prepared.

Put the egg white protein into two pots separately.

Add milk and corn oil to the egg yolk.

Sift in the cake flour.

Use a hand-held whisk to stir evenly. It must be free of particles and dry powder, and set aside for later use.

Use an electric whisk to make a thick bubble of egg whites, then add 20 grams of sugar and turn to high speed to beat the egg whites.

After the egg whites are finely beaten, add 20 grams of sugar and continue to beat them at high speed.

Add the remaining sugar when the egg white has obvious lines.

Pick up the egg beater and let the egg whites appear at a large right angle, then turn to a low speed for about one minute to make the egg whites more delicate.

Take one third of the egg white and put it in the egg yolk paste.

Add passion fruit jam and continue to mix.

This is the mixed egg yolk paste.

Pour the egg yolk paste into the egg whites and stir up and down.

This is a cake batter that is evenly mixed, delicate and shiny.

Pour it into a 6-inch live-bottom cake mold and shake it lightly to shake out the bubbles.

Preheat the air fryer at 200 degrees for 5 minutes.

Put the cake mold in the fryer, bake at 140 degrees for 20 minutes, then remove and cover with tin foil (to prevent the surface from baking) and bake at 160 degrees for 30 minutes.

When the cake is out of the oven, tap the cake with your hand to make a bang and it is cooked. Take it out and tap it for a few times (forgot to take a photo). After cooling, use a mold release knife to demold.

The final product, because of the homemade passion jam, is sour and sweet!
Tips:
You can also replace the passion jam with cocoa powder, matcha powder, coffee powder, or leave it alone. The eggs need to be large. These three eggs are about 180 grams in shell. The small ones are more than one. I have all the sugar. Putting it in the egg whites is good for the egg whites, and when you mix it, you have to turn it up and down, don't mix it in a circle, and finally add the cream to make the cream cake. Unfortunately, I don't have cream anymore, so it's delicious!
