Amaranth Salad
1.
After cutting off the roots of the amaranth, wash and drain.

Bring water to a boil in a pot, add appropriate amount of salt and oil.
3.
Put the fresh amaranth in the pot.

Cover the pot and cook for two minutes.
5.
The color of the amaranth has changed, turn off the heat when it is cut off.
6.
Drain the cooked amaranth, add salt, sugar, chicken essence, oyster sauce, aged vinegar, and sesame oil.
7.
Add appropriate amount of chili oil.
8.
Just mix the amaranth with various seasonings evenly.
Tips:
There is a lot of sand at the root of amaranth, which should be cut off. Wash it several times in the future, otherwise there will be sand when eating it, which will affect the taste.
