Amaranth Tofu Soup

Cut tofu into slices, slice ginger and garlic for later use.

Wash the amaranth in the water and set aside.
3.
Heat the wok, add in less oil and saute fragrant ginger and garlic slices.

Heat the wok, add in less oil and saute fragrant ginger and garlic slices.

Pour a bowl of water into the concentrated stock and bring it to a boil.
6.
Add tofu slices and cook for five minutes.
7.
Add amaranth and cook.
8.
Season with a little salt and serve.
Tips:
1. The cooking time of amaranth should not be too long;
2. Concentrated stock contains heavy salt content, so this dish contains less or no salt.
3. Also note that amaranth cannot eat with soft-shelled turtle and turtle meat.
