1. Cut broccoli, carrots and pleurotus eryngii and blanch them. Add appropriate amount of oil in a non-stick pan, add the minced green onion and garlic to the pan, stir-fry broccoli, carrots, and pleurotus eryngii, add salt, sugar, and pour a small amount of water, starch, juice out of the pan and set aside for later use.

2. Add a little salt and sugar to the egg mixture, pour it into a pan and spread it out into a thin omelet. Set aside.
