Asparagus Clam

The razor clams are relatively clean when they are bought. Wash them in a pot of boiling water, add a few green onions and 3 slices of ginger. If the clams are not very clean, ask the boss for some sea water, go home and add a few drops of oil to raise them.

Peel the meat of the razor razor, and tear off a piece of dirt on the edge (the place where the red circle is up).

Wash the razor razor meat in water, check one by one to see if there is any mud or sand, and rinse it off if there is any.

The asparagus is longer and thicker. The skin is shaved off, the old roots are cut off, and then cut into slices (it can also be cut into sections, there are elderly people in my family, and the slices are better for biting).

Add bottom oil to the wok, sauté the scallions and ginger, add the asparagus and stir-fry the razor clams.

Add a small bowl of water (you can get the upper clear soup after the water in the blanched clams has settled) and turn the heat on and off. Don't use too much water. Because there are elderly people in my house, the asparagus needs to be softened, so I add a little more soup.

Season with salt and sugar before serving, sprinkle with chopped green onion, and serve.
Tips:
1 If the mouth is good, it is best to boil it over a high fire, and don't cook it too old.
2 This dish has a light taste and you have never eaten any heavy razor clams, so it is not recommended to add other seasonings.
3 My mother said that even if the razor clams are just dug out of the hole, the shell is very clean. Those razor clams covered with mud are artificial and it is not recommended to buy them.
4 Most of the shellfish I bought were asking the stall owner if they raised it clean. I usually don’t raise them when I go home. I wash them directly and rinse them with blanching water. Even if there is mud and sand, they will be washed away. Throw away the clean one. Therefore, there is no experience in how to raise shellfish to make it spit sand. I hope that experienced cooks can give pointers.
