Assorted Cold Noodles

Wash toon sprouts and pickles with salt particles on the surface, chop them, and set aside.

Wash the surface of the carrot and pickles, chop them, mix well with the toon sprouts and pickles, put them in a small bowl, and set aside.

Put the peanuts in a pan with cold oil and fry them over medium-to-low heat.

Put the tender cowpeas in a pot of boiling water and blanch them for five minutes.

Cut the blanched cowpea into one-centimeter minced cowpea and set aside.

Put the mashed garlic in a small bowl.

Add balsamic vinegar.

Add sesame juice.

Add a little mineral water, mix well to form a sauce, set aside.

Heat the pan with oil, add the chopped tomatoes, and fry the tomato sauce.

Add an appropriate amount of hot water and bring to a boil.

Knock the eggs into a bowl and beat them into egg liquid.

Sprinkle the egg liquid evenly into the pot and boil.

Sprinkle in a packet of instant noodle seasoning.

Add coriander and chopped green onion.

Add some salt to taste.

Add a tablespoon of light soy sauce to mix.

Bring to a boil on high heat, turn off the heat, cool down, and set aside.

Put the noodles in a pot of boiling water to cook, remove the noodles in cold boiling water one or two times, and then remove them into the plate.

Add the chopped carrots and pickles.

Add toon sprouts and chopped pickles.

Add fried peanuts.

Spoon in the tomato sauce.

Add the sesame garlic vinaigrette sauce, mix well, and serve.
Tips:
1. The ingredients in the noodles can be selected according to their preferences and the existing ingredients at home. Usually, I use cucumbers and cowpeas. This time I don’t have cucumbers, so I didn’t put them.
2. The tomato and egg sauce can be placed in the freezer of the refrigerator to cool it down, so that it tastes more refreshing, but for those with a bad stomach, it is recommended to cool it at room temperature.
3. The cooked noodles should be overcooled with cold boiled water. The number of times of overcooling depends on their preferences.
