Auspicious Jam Pie

Mix the water and egg liquid evenly.

After the butter has softened at room temperature, add fine sugar and mix well.

Add low flour and knead it into corn flour by hand.

Add water and egg mixture.

Turn the dough with a scraper with one hand, and knead it into a smooth dough with the other hand. Don't knead it for too long to avoid ribs. Cover with plastic wrap and keep it in the refrigerator for 1 hour.

Take out the dough and place it on the chopping board, flatten the dough with a stick, and roll it out evenly on the side into thin slices. The rolled pie crust is buckled upside down on the 7-inch pie pan. Use your fingers to lightly press the pie crust so that the pie crust is close to the pie pan and press the inside tightly. Preheat the oven to 190 degrees for 10 minutes.

Use a rolling pin to press on the pie pan to cut off the excess pie crust. Squeeze the edge of the pie pan with your thumb to make the pie crust higher than the pie pan.

Fork some vent holes on the bottom of the pie crust.

The remaining pie crust dough: save 30 grams of the original color dough, add an appropriate amount of red yeast rice to the rest, knead evenly, and roll evenly into thin slices.

The green dough is cut into small pieces of leaves and stamens, decorated and placed on the pie plate (excess red noodles are made for cookies)

Put the jam pie in the middle layer of the preheated 190 degree oven and bake for about 25 minutes. The finished product is very sweet!
Tips:
1. The butter is so soft that it can be pressed down with your fingers.
2. Don't knead the pie crust dough for too long, just form a dough.
