Avocado and Purple Cabbage Sushi Rice

Blanch half a purple cabbage

Cut the blanched purple cabbage into small pieces and put them in a food processor to beat them into puree

Strain the purple cabbage juice through a sieve

Take a bowl of freshly cooked white rice

Put in sushi vinegar, I also added some sugar and stir well

Cut avocado into small cubes

Add a small amount of lemon juice

I used a hand-held stirring rod to beat the puree, I didn’t beat it too fine and granular.

Divide the mixed sushi rice into two portions, add one portion to the avocado puree and mix well
10.
Add an appropriate amount of purple cabbage juice to the other portion and mix well

Use the mousse cake mold and fill the mold with rice

I also added a few sweet prawns and wooden fish flowers for decoration
Tips:
Because purple cabbage gets brighter when it touches vinegar! Add accessories according to your preferences!
