Bacon Cheese Bagel
1.
Ingredients: Arowana bread with wheat flour 500 grams yeast 6 grams salt 5 grams sugar 30 grams coffee milk tea 295 grams butter 20 grams freshly ground black pepper granules 6 grams Accessories: bacon 6 slices cheese slices 5 slices Sugar water: sugar 30 grams 1L water.
2.
Put all the ingredients except the butter into the bread machine, start mixing for 20 minutes, add softened butter and continue to knead to the complete stage, which takes about 15 minutes.
3.
In the middle, fry the bacon and cut the cheese slices into small pieces, then add to the kneaded dough and mix well.
4.
Then spheronize, let it rest for about 15 minutes (cover with plastic wrap).
5.
Then divide into 12 parts and continue to relax for about 15 minutes.
6.
Take the dough and roll it into a long strip, then roll it up from the long side.
7.
Roll it into a strip about 20 cm in length, and press it into a thin skin at one of the tails.
8.
Then the 2 ends are folded in half to form a ring, and put in the steamer for fermentation for about 30 minutes (automatic steaming function of the steamer, no need to heat water separately).
9.
When the time is running out, prepare the sugar water, cook it until there are small bubbles on the edge, then put the fermented bagels together with the oil paper into the blanching for about 20 seconds, turn it over and continue to blanch for a while.
10.
Put the processed bagels on the baking tray (the oven can turn on the preheating function to 200 degrees).
11.
Then put it in the preheated oven at 190 degrees for about 20 minutes.
12.
Look at the finished product, it's very tempting.
13.
It is incredibly fragrant to eat after cooling.
Tips:
1. It is more convenient to make bagels than other breads, without secondary fermentation, and it is delicious, chewy and meaty.
2. I use the Midea S3-L251E steaming oven, which has its own steam function, which is especially suitable for making bagels or European bags.
