Baiyun Pig Hand

Chop the trotters and soak them in water for 3 hours to remove the blood and change the water 3 times.

Add cold water to the pot, put the trotters, put 3 slices of ginger, turn to medium heat and cook for about 10 minutes, remove and clean.

Add water to another pot, bring the pig's feet to a boil, turn to medium heat, and cook for about 30 minutes until the pig's feet are cooked.

Remove and rinse with cold water to cool and drain.

Peel the ginger and slice it, shred the red pepper, put the water, sugar, and glutinous rice into a pot to dissolve, then add vinegar and salt, turn off the heat and let cool, filter it with a mesh spoon, and set aside for use.

Put the trotters into the container, pour the sweet and sour sauce, cover the trotters, put them in the refrigerator and soak for 12 hours.

Heat oil in a frying pan, add appropriate amount of chopped onions, fry the minced ginger until slightly yellow and fragrant, pour a little light soy sauce, chopped green onion and chicken essence into a dipping sauce.

Put the soaked pork knuckles on a plate and top with the dipping sauce.
