Baiyun Pig Hand

Peel the old ginger and cut into thin slices, and cut the red pepper into thin strips. Pick white sugar, white vinegar, clean water and salt to make sweet and sour sauce for later use.

Clean the pork knuckles, add 1/2 clean water to a 3 liter steel pot, boil the pork knuckle and cook for 20 minutes. Take out the running water and rinse it well, soak it in ice water for 1 hour. The pig's knuckles were taken out and drained, cut into 3cm pieces, and rinsed.

Add 1/2 clean water to a 3 liter steel pot, add pork knuckles, sliced ginger, white wine, salt, and boil the steam lock on medium heat. Turn to low heat, and simmer for 20 minutes. Remove, put in ice water, chill for 1 hour, the meat will shrink and tighten.

Finally, add the chilled pork knuckles to the prepared sweet and sour sauce and red pepper shreds and marinate for 6 hours.
Tips:
Liquor can be replaced by rice wine.
