Baked Grilled Shrimp and Fish Balls Cubes

First make the custard cream sauce: (milk 250ml, vanilla pod, 1/2 egg yolk, 3 white sugar, 75 grams, 25 grams of low-gluten flour)
Scrape vanilla seeds into the milk. Boil on low heat until it is about to boil, turn off the heat.

Mix the egg yolk and white sugar, stir and beat until the color of the egg yolk turns white.

Add the low-gluten flour to the egg yolk paste in portions, and gently stir until there are no particles each time. (Don't stir it, stir gently, and there are no particles. After stirring, it will be in a flowable state)

Add the heated milk to the roux several times and mix well. (Don't add it all at once, it will boil and solidify the egg yolk)
