Baked Potato Diced with Egg Yolk

Main ingredients: potatoes, cooked salted duck eggs.

Boiled salted duck eggs, take the egg yolk and set aside.

Dice the potatoes.

Soak in clean water for 10 minutes.

Remove and drain the water.

Put oil in the pan, 50% heat, add diced potatoes and fry.

Fry until the diced potatoes are slightly firm, remove them.

Increase the oil temperature to more than 70% hot, add diced potatoes and fry again.

Fry it into golden brown and then take it out and set aside.

Leave a little oil in the pan, add salted duck egg yolk, and fry slowly over low heat.

Stir fry until the duck egg yolk has no particles, and it will be fluffy and sanded.

Add spare diced potatoes.

Coat the salted egg yolk evenly on the diced potatoes.

Tips:
1. When frying egg yolks, be sure to use a low heat to prevent the bottom from getting muddy.
2. Add diced potatoes and turn off the heat.
