Baked Pumpkin with Salted Egg Yolk

Prepare all materials

Cut the pumpkin into strips.

I used my own salted duck eggs. Take the egg yolk, spray white on the surface and sprinkle it into the oven at 180 degrees and bake for 5 minutes.

Crush the baked salted egg yolk with a spoon and set aside.

Bring half a pot of water to a boil, add pumpkin strips and cook for two minutes.

Take it out and pour out the water.

Hot pan oil

Pour in the minced salted egg yolk.

Stir fry over medium heat to produce bubbles

Pour in the pumpkin strips and stir fry, so that the salted egg yolk is evenly coated on the pumpkin, no need to over-fry.

Sprinkle with chopped green onion on the plate and enjoy.
Tips:
The salted egg yolk itself is salty, so there is no need to add additional salt.
