The minced meat and soy sauce barbecue sauce are sealed and kept in the refrigerator overnight.

Wash the lotus root and peel it off.

Grate or smash with a food processor. I personally like the pellets, so I didn't use a food processor to break it. It depends on my personal preference.

Then add the minced meat to the chopped lotus root and chopped shiitake mushrooms and mix well in one direction. Blanch the shiitake mushrooms with hot water and chop them.

Add eggs, olive oil, and salt to make a puree.

Stir vigorously to make a puree, because the lotus root and shiitake mushrooms will bring some moisture, so don't add water to make the puree.

Use tools to make big meatballs. If you eat fried meatballs directly, they will be smaller. It is very fragrant to eat a few small meatballs here, which is a different feeling.

Don't put the balls in too early after the oil is hot.

If the surface is golden, it doesn’t need to be deep-fried, and the surface is hard.

Prepare a steamer to steam the meatballs thoroughly. After boiling, steam more to get the oil out.

Wash the rapeseed and boil a pot of boiling water.

After cooking until 8-9 minutes is cooked, take it out and use cold water once. Do not wash too many times, which may be too cold.

Add teriyaki sauce, you can choose your favorite sauce, sweet and sour sauce, you can personally like it, the refrigerator always stocks teriyaki sauce. My favorite recipe for teriyaki sauce is 80g light soy sauce, 30g mirin, 60g cooking wine, 10g soy sauce, and a tablespoon of fine sugar.

Put the sauce on the balls after boiling it hot.
Tips:
1. When beating the mud, be sure to work hard in one direction and don't change direction.
2. The taste of cured meat can be adjusted according to your own preferences.
3. The temperature of the croquettes must be focused, not too dark in color. In fact, the fried meatballs are delicious.
