Beef Noodles

Material: beef, beef bones

Accessories: shallots, chili oil, white radish seasoning: shallots, ginger slices, star anise, aniseed, bay leaves, grass fruit, cumin, pepper, white pepper, ginger, nutmeg, amomum, tangerine peel, yamana, Salt, chicken powder

Wash beef and beef bones with clean water, and then soak for at least 4 hours.

Rinse the seasonings with water and put them in the seasoning bag for later use; put the beef, beef bones, and seasoning bag in a hot water pot, boil over high heat, and skim off the foam.

Turn to low heat and simmer for 2 hours.

Remove the beef, wrap it in plastic wrap and let it cool and slice it for later use.

Cut white radish into thin slices, mince chives and set aside.

Put a proper amount of water in the pot and bring to a boil. Add the noodles and remove them after they are cooked. Blanch the radish slices and add cold water to cool them to remove the odor of the radish.

Put the ramen noodles into a bowl, add salt and chicken powder to taste, add sliced radish, beef slices, chopped green onion, and top with beef broth. Adjust the oil and spiciness according to your preference.
