Beef Stew with Potatoes

Cut the beef into small pieces and rinse with clean water.

Drain.

Boil the water in the pot, add the beef to blanching water, blanch the water and drain again.

Ginger slices.

Pour oil in a dry pan, add sliced ginger and fry twice, then add beef and stir fry for 3 minutes on high heat.

Pour boiling water into the pot, the amount of water is just slightly more than the beef. Add chili shells, pepper, pour a few drops of vinegar and cooking wine, add appropriate amount of salt, boil over high heat, turn to low heat, cover the pot and simmer for 1.5 hours, turning 2 to 3 times during the period.

Cut the potatoes into thick pieces.

Add potatoes to the pot and mix well. Continue to simmer for half an hour on low heat, turning 1 or 2 times during this time.

When the potatoes are cooked, add salt as appropriate, add a few drops of light soy sauce and stir well.
