Tips:
Some friends like to blanch the beef in boiling water first to remove any froth. The Turks believe that the beef is badly cooked because it retains the original moisture in the meat. If the meat loses its moisture, no matter how much it cooks, it won’t be cooked. Therefore, not only do not blanch the beef with water, but also stir-fry the beef in a frying pan first to keep the moisture in the meat and not lose it. In addition, seasonings such as salt should also be added last to avoid losing moisture. Don't put too much water when stewing meat over low heat, just 1/4 cup. You can also put a small amount of tomato juice instead of water.
