Beef with Eggs and Tomatoes

Thinly slice the beef and marinate in light soy sauce, dark soy sauce, oyster sauce, sesame oil, corn starch and baking soda one night in advance. There is another way to marinate without overnight. Use two spoons of baking soda to marinate the meat evenly for 15-20 minutes. Wash the baking soda with clean water, mix well with soy sauce, light soy sauce, oyster sauce, sesame oil and a little cornstarch, then marinate for 15- 20 minutes.

Boil the tomatoes in boiling water for 1-2 minutes, soak them in cold water, peel them, and cut into pieces with a hob. If you like to eat with the skin, ignore the peel and cut directly into pieces.

Break the eggs and add a large spoonful of milk. This step is very important ❗️, it can make the eggs soft and tender.

Pick up the frying pan, and fry the beef until it becomes discolored and fresh and ready for use.

Wash the pan, pour the hot oil into the eggs, push the eggs from the side of the pan to the middle with a spatula after a little solidification, and push the eggs several times to make the eggs fluffy and three-dimensional. After there is no flowing liquid, stir-fry and scatter it for later use.

Saute soft tomatoes with a little oil, add appropriate amount of water, add tomato puree, and simmer for a few minutes. The amount of water depends on how much juice you want to decide.

Pour beef and eggs, add salt, sugar, light soy sauce, and chicken powder to taste according to personal taste. Finally thicken and sprinkle chopped green onion.
