Beef with Sauce

Put the beef tendon in a dish, pour it into clean water and soak for 3 hours to remove the blood.

After the water is dry, pour in the light soy sauce.

Cover with plastic wrap and put in the refrigerator, soak overnight.

Take it out the next day and pour the beef and light soy sauce into the pot. I use a cast iron enamel pot, but I can also use a casserole.

Add cold water and pour more after the water has covered the meat.

Prepare the seasoning for the stew. Pepper, star anise, and cinnamon fruit bay leaves are the most organic spices for stew. Don't put tangerine peel, hawthorn, dried chili.

Go to the froth.

Put the stew seasoning in.

Add the sweet noodle sauce.

Add onion and ginger slices.

Add fermented bean curd.

Add the right amount of salt.

Simmer on low heat, and cover the pot with the lid on. Simmer for about 2 hours and 15 minutes.

After the stew is done, open the lid and prick it lightly with chopsticks, which is a bit of resistance. Turn off the heat, cover the lid and simmer. After letting it cool, you can fish out the meat. You can eat it out, but it’s best to put it in the refrigerator overnight for a more delicious taste.
