Beibei Pumpkin Steamed Glutinous Rice

Prepare all the ingredients. The glutinous rice needs to be soaked for about two hours in advance.

The soaked glutinous rice can be easily crushed by hand, then drain the water, put it in the steaming grid, and spread it flat. Use chopsticks to insert some small holes on the surface to facilitate ventilation and make it easier to steam. Steamer gauze or silicone mat should be used inside the steaming grid.

Clean the Beibei squash and cut it in a zigzag shape with a knife on the top third.

Uncover the top lid, dig out the pumpkin seeds and pumpkin flesh inside, and clean them up to become a pumpkin cup.

Wash the red dates, remove the date cores, cut into small pieces, and soak them in clean water with the raisins for about ten minutes.

After the glutinous rice is steamed, put it in a bowl and let it cool slightly.

Drain the red dates and raisins, put them in the glutinous rice, and put in the honey red beans.

Stir thoroughly with chopsticks. Glutinous rice is sticky and difficult to mix well.

Fill the pumpkin cup with the well-mixed rice noodles. The surface can be slightly decorated with red dates.

Align the cut pumpkin lid with the cut edge and replace it.

Then put the pumpkin in the steamer and steam for about 10 minutes until the pumpkin is cooked through.
Tips:
1. Red dates and raisins can be replaced with other dried fruits or nuts according to personal taste. If you don't put honey red beans, you can add a little white sugar to the glutinous rice to increase the sweetness.
2. The steaming time should be adjusted appropriately according to the size of the Beibei pumpkin. Beibei pumpkin is easy to cook, and the glutinous rice inside is cooked, so don't steam it for too long.
