Bird's Nest Anchovy Shrimp

Wash the shrimp;

Remove the head and skin of the prawns and leave the tail, cut the spine into a large piece, and remove the shrimp thread

Sprinkle with chopped green onion, chopped ginger, salt, and cooking wine, and marinate for a good taste; then cut the Xinmei radish into shreds and put it in a clean large plate;

After beating the egg whites, add the starch and stir evenly;

Add peanut oil to the pot and cook until it becomes 4 to 50% hot, add the longkou vermicelli and fry it until it puffs, remove it, and put it on a large plate;

Dip the shrimp body in the well-mixed paste (do not dip the tail in the paste);

Put it in 3 or 40% hot oil to fry;

Put the fried prawns on top of the vermicelli, with the tail facing out, and place it in a circle;

In a separate pot, add peanut oil to the pan, heat the pan, put the chopped green onion and ginger in the pan, pick out the chopped green onion and ginger, add tomato sauce and cooking wine, thicken the pan and burst the juice;

Tips:
1. Shrimp must be fresh;
