Add a small amount of warm water to the yeast, pour it into the flour, add water and sugar, and knead it into a soft dough. Ferment in a warm place to double its size.
2.
Cut honey cherries and winter melon strips into fine pieces
3.
Sprinkle some dry flour on the panel, knead the fermented dough to expel the air, roll it into a rectangle with a rolling pin, and roll it out thinner
4.
The lard melts in water and brushes evenly on the dough
5.
Sprinkle evenly with chopped honey cherries and chopped winter melon
6.
Roll up the dough slowly
7.
Flatten the rolled dough slightly and cut into chopstick-thick strips
8.
When cutting to 8 to 10 pieces, pinch both ends with your hands and pull them to a length of three inches
9.
Flip with your left hand, press the left with the right
10.
Roll it again, press the joint underneath, and press it in the middle with your thumb to form a bird's nest shape.
11.
After everything is done, put it in the cage, put on the lid and let it stand for about 30 minutes
12.
Put the proofed bird's nest silk into the pot, and steam it on medium heat for about 15 minutes after the water boils. After turning off the heat, simmer for 5 minutes before opening the lid.

Tips:
1. Roll the noodles thinly, and roll them up to have more layers
2. The cut sliver should be stretched slowly and then rolled up
3. After the bird’s nest silk is rolled, it should be proofed for half an hour. After steaming, turn off the heat and do not open the lid immediately. After simmering for 5 minutes, open the lid.
