Bitter Gourd Fried Pork

Cut the bitter gourd and remove the flesh, cut into thin slices, marinate in salt for 20 minutes, and then rinse with water. Cut the pork belly into thin slices.

Pour a small amount of oil into the pan, heat it to 60% heat, add the pork belly and fry until the oil is slightly scorched, add the ginger shreds and stir fry.

Then add bitter gourd and continue to fry over medium heat.

When the bitter gourd is 80% ripe, add the finest oyster sauce, light soy sauce and some salt and stir well.
Tips:
After bitter gourd is pickled with salt and washed, the bitterness will be much reduced. The addition of high-quality oyster sauce to bitter gourd will also give bitter gourd a unique taste, and the bitter gourd has a freshness.
