Bitter Melon Egg

Bitter melon, half, sliced and thinly sliced, the thinner the better; beat the eggs.

Boil the water in the pot, add 1 tablespoon of salt, pour in the bitter gourd and blanch for 15 seconds, pick up and drain the water.

Pick up the frying pan, add the bitter gourd, and stir-fry with an appropriate amount of salt and sugar.

Then add the egg liquid.

Tips:
Blanching the bitter melon can appropriately reduce the bitterness.
