Bitter Melon Omelette

Cut the bitter gourd in half, use a knife or spoon to take out the flesh in the middle, if the bitter gourd is tender, you can directly take it out by hand

Cut the bitter gourd into strips and then dice, if you are afraid of hardship, you can remove a little more white flesh

Put diced bitter gourd and eggs in the bowl and stir until evenly distributed. If you are afraid of hardship, you can blanch the bitter gourd first and then squeeze the bitter water out

Add appropriate amount of salt to the egg liquid, add according to personal taste, and then stir evenly with chopsticks

Put edible oil in a non-stick pan or iron pan with a little oil as much as possible to make it more crispy

After the pot is hot, pour the egg mixture and stir it appropriately to prevent the bitter gourds from gathering together and not forming well

Fry on both sides until golden brown and crispy. You can also use two spatulas to turn it over if you can’t overturn the pan.
Tips:
If bitter gourd is tender, it can be processed like me, with only a little bitter taste. If you are a bit old, you need to dig out a bit more when cutting bitter gourd, and the blanching water is too cold to squeeze out the bitter water. They are all effective ways to get rid of bitterness!
