Bitter melon is also called bitter gourd, but it has less bitterness than ordinary bitter gourd. The best choice for those who like to eat bitter gourd but are afraid of bitterness.

Bitter Melon Scrambled Eggs

1. Break it in half, use a spoon and scrape off the inner flesh

2. Cut into thin slices, add 2 tablespoons of salt and stir well

3. Then rinse to remove the salty taste

4. Boil water in a pot, add 1 tablespoon of cooking oil to the boil, then pour bitter gourd slices in to blanch water

5. Peel the garlic head and slice it for later use

6. Heat oil in a pan, pour in eggs and fry until set and scattered

7. Heat oil in a wok, saute the garlic slices and then pour in the bitter melon slices and stir fry for a while

8. Add salt, chicken essence, sugar and stir well

9. Add the eggs and stir fry for about 1-2 minutes before they are out of the pan
