Black and White Sesame Toast

Pour 225 grams of high-gluten flour, 125 grams of water, 6 grams of yeast, 3 grams of salt, and 7 grams of skimmed milk powder into a bowl, and stir evenly with chopsticks.

Then knead the dough, round it, put it in a container, and cover it with plastic wrap for fermentation.

Fermented until it is twice as large as the original, it is the medium dough, and set aside.

Put 96 grams of high-gluten flour, 10 grams of milk powder, 2 grams of salt, 32 grams of sugar, 68 grams of water, 30 grams of egg liquid, and 3 grams of yeast in the mixer.

Use chopsticks to mix the ingredients first.

Then put in the fermented medium dough.

Turn the mixer on the 3rd gear and stir until the dough can pull out a thicker film, about 4 minutes.

Add the softened butter and continue stirring for 5-6 minutes.

At this point, the dough has reached the expansion stage where the glove film can be pulled out.

Round the dough, put it in a basin, and cover with plastic wrap to ferment.

Fermented to 2.5 times its original size.

Mix black sesame paste and white sugar, mix well and serve as filling.

Fold the 2 sides of the dough inward, and then roll it up. The width is based on the toast mold.

When the bread dough is 8 minutes full of the mold, it can be baked.

After coloring, cover the surface of the bread with tin foil to prevent the color from being too dark.
