Black Rice Glutinous Rice

The black rice is washed with water and soaked in a bowl of water for 4 hours

Put the soaked black rice and water into the pressure cooker, then add a bowl and a half of water

Boil on high heat until the pressure cooker makes a popping sound, then change to the minimum heat and cook for 20 minutes

Put the black rice out, put it in lukewarm, and sprinkle in the sweet koji, mix well

Dip cold water with your hands to compact the rice, don’t use too much force

Make a hole in the middle of the rice

Put the lid on, usually 2 days in summer

When eating, you can put some cold water or add water to boil it to prevent it from continuing to ferment
