After kneading the dough to the complete stage by the post-oil method, cover it with plastic wrap and place it in a warm place to ferment to twice its original size;

Pour the whole dough from the basin on the chopping board, press and exhaust, divide it into 16 equal parts, cover with plastic wrap and let it stand for 15 minutes;

Add a large bowl of hot water to the oven, turn the oven to the fermentation position in advance, preheat for 5 minutes and then close it, put the toast mold in the oven for secondary fermentation until it is 8-9 minutes full (the hot water can be changed once in the middle). When it reaches 8-9 minutes, take out the toast mold and preheat the oven to 175 degrees. During this time, cover the dough with plastic wrap to prevent the skin from drying out. After the oven reaches temperature, put the toast mold in the oven and bake for 38-40 minutes. After 7-9 minutes, the surface of the toast should be covered with tin foil to prevent the surface from sticking.

1. The hygroscopicity of flour will be different due to the brand or the length of storage time, so you need to adjust the amount of liquid according to the actual situation. The dough is relatively sticky when it is just kneaded, and it will gradually become smooth;
2. Because this recipe uses the direct method, it is better to knead for two minutes more than the middle method during the kneading process. I use a chef's machine and knead it for 2 more minutes with the second gear, and the finished product will have a better layering effect. Good, but do not knead for too long, which will cause the dough to lose its muscles;
3. Each oven has a different temperature, and the temperature is slightly different, which can be adjusted according to the actual situation, but the small oven must be covered with tin foil after the toast is colored to prevent the surface from sticking.
