Windy sunny day:
1. The hygroscopicity of flour will be different due to the brand or the length of storage time, so you need to adjust the amount of liquid according to the actual situation. The dough is relatively sticky when it is just kneaded, and it will gradually become smooth;
2. Because this recipe uses the direct method, it is better to knead for two minutes more than the middle method during the kneading process. I use a chef's machine and knead it for 2 more minutes with the second gear, and the finished product will have a better layering effect. Good, but do not knead for too long, which will cause the dough to lose its muscles;
3. Each oven has a different temperature, and the temperature is slightly different, which can be adjusted according to the actual situation, but the small oven must be covered with tin foil after the toast is colored to prevent the surface from sticking.
