Amaranth is a vegetable with extremely high nutritional value, especially it contains more minerals such as iron and calcium. This season is also a dish with a high rate of appearance in my house!

Boiled Amaranth

1. Remove the rhizomes of amaranth and wash

2. Bring the water to a boil, pour the amaranth and cook

3. Add salt and chicken essence, then serve

4. Put oil in another pot, stir-fry minced ginger and pepper to fragrant

5. Add a bowl of boiled amaranth water, add preserved egg diced and boil

6. Pour it on the dish and it's done
