Boiled Beef

The beef tenderloin bought at Dingdong is about 250 grams, and a serving for two is just right.

Cut into thin slices against the grain, add a spoonful of salt in cold water, soak the beef in bleeding water, and then wash it off with water.

Wash the beef and squeeze it dry, then season and marinate. This step is more casual, add baking soda, salt, white pepper, oyster sauce, green onion and ginger cooking wine, fully grasp the meat until it is sticky, then add water and starch and stir well, so that the marinated beef will be very tender. Stir-fried beef is also marinated in the same way, but with an additional step of sealing oil.

While marinating, prepare side dishes, wash bean sprouts, celery, chop minced garlic, minced ginger, prepare dried chili, pepper and bean paste.

Pour a little oil on the heat, add the dried chili and stir-fry on a low heat until the dried chili becomes darker in color, then add the pepper. This step is quite easy to fry the chili 😔

Put the fried crispy pepper and dried chili on a cutting board and let it cool, then chop it to make a knife-edge chili, which should be chopped more than mine. In this step, a lot of dried chilies will splash out during the chop. When chopped like this, my hands are already sour.

Heat oil in a pot, stir-fry the side dishes, add a little salt to taste, stir-fry the bean sprouts until soft and heat in water for a while. Remove and drain and spread on the bottom of the bowl.

Heat oil in a pot to fragrant ginger and garlic, add a tablespoon of bean paste and stir-fry on low heat to get red oil, heat water to boil, add salt, light soy sauce, dark soy sauce and sugar to taste according to your own taste. Add sugar to increase the umami taste. The beef is boiled and cooked, and immediately after it changes color, remove it and place it in a bowl. Use the remaining temperature in the meat and the soup to continue to boil the meat.

Boil the hot soup in the pot again, skim off the floating powder and pour it into a bowl, sprinkle with knife-edge chili and minced garlic, and pour a spoonful of hot oil on the chili to inspire the flavor of the seasoning. If you are not happy to make your own knife-edge chili, you can also use pepper powder and chili powder instead, but remember to spread it under the minced garlic and green onion to avoid direct contact with hot oil and burn it.

A delicious boiled pork slice is ready, and finally sprinkle some white sesame seeds on it and start eating! Because I didn’t like to eat spring onions and coriander since I was young, basically all dishes are green 😀
