Boiled Edamame in Brine

First take off the edamame, wash it several times, rinse it well, and soak it in salt water for 10 minutes to better remove surface residues.

Then remove and drain the water, and cut the two ends with scissors, so that there is a small mouth, which is easy to taste.

Pour into a casserole, add 2 tablespoons of salt, one dried red pepper, several peppers, two bay leaves, one star anise,

Add the water just under the edamame and a small amount of sesame oil.

After the water has boiled, open the lid and no longer cover it. Turn to medium and low heat and cook for about 5 minutes. Turn off the heat when the edamame is cooked.
Tips:
Add salt in advance and add sesame oil to keep the green color of edamame, fragrant and tasty. Open the lid of the pot after the water has boiled. It can no longer be covered. Just pay attention to the heat and don't cook it for too long.
