Boiled Rice Noodles with Tomato Lean Pork

1. All the ingredients (the lean meat is sliced and then add appropriate amount of salt, peanut oil, corn starch, soy sauce to marinate for a few minutes; the rice noodles are soaked about 1 hour in advance).

2. Boil water in a pot, blanch the rice noodles, and heat the tomatoes in the same way until the skin cracks.

3. Peel the tomatoes and cut into small pieces.

4. Heat the pan with oil, put the tomatoes in and fry until softened.

5. Add two bowls of water to a boil.

6. Add the rice noodles and lean meat after the water is boiled.

7. Cook for a few minutes on high heat and season it.

Tips:

1. Jiangxi rice noodles are harder, so it will be easier to soften after soaking for an hour or two in advance.
2. The tomatoes are better peeled after being blanched.
