Boiled Shrimp

Clean the shrimp, cut off the shrimp silk, drain the water and set aside.

Cut green onion into sections and slice ginger

Heat the oil in a pot, saute the scallions and ginger, and cook a tablespoon of white wine.

Pour in water and bring it to a boil.

Add the shrimp and cook for 2 to 3 minutes until the shrimp turns red. Turn off the heat and simmer for 10 minutes.

Remove the shrimp and put it in ice water for a few minutes. Dip in your favorite ingredients when eating.
Tips:
1. The freshness of the shrimp is the key to ensuring the taste. Be sure to buy live shrimp or fresh shrimp.
2. Adding some white wine can effectively remove the fishy smell of shrimp.
3. Don't cook the shrimp for too long.
4. The dipping material does not need to be complicated, just simple light soy sauce. My family likes to add some mustard oil, it tastes better.
