I have eaten many ways to eat shrimps: fried, salted and peppered, braised, and grilled, but I still prefer brine-based shrimps. This method restores the freshness of seafood, retains the most nutrients and is healthier.

Boiled Shrimp in Brine

1. Shallots preserved onion roots

2. Chop 3 slices of ginger and add to vinegar.

3. Pour 5 grams of salt, 3 teaspoons of cooking wine, and a handful of Chinese pepper into the water. Boil the water to about 90.

4. Put in the prawns, add the shallot roots and 2 slices of ginger, cook for up to 5 minutes, and bring out of the pan.

5. With the dipping sauce, you can enjoy the food beautifully.

Tips:

1. The shrimp should not be cooked for a long time, otherwise it will lose its tender taste. 2. Shrimp is a cooling food. Adding ginger to vinegar can neutralize the cooling and make it healthier.
