Braised Chicken with Yuba

Unpack and wash the yuba.

Cut into small pieces and soak in clean water.

Wash the chicken and cut into pieces, peel the carrots, wash and cut into hob pieces, peel the ginger and cut into slices, wash the green onions and cut into small pieces for later use.

Wash the pepper and cut diagonally into sections.

Boil the chicken in a pot, add a few peppercorns to get rid of fishy.

Remove and drain the water for later use.

Stir fry in a hot pan with warm oil.

When it is slightly yellowed, set aside, add garlic and black bean sauce and stir well, then add cooking wine, ginger, green onion, star anise, and stir-fry together.

Add the carrots and stir-fry together.

Add the right amount of salt, sugar, and water, to cover the amount of all the dishes, bring to a boil on high heat, turn to low heat and simmer for about 20 minutes.

Add the dried yuba and simmer for about 20 minutes.

Add the chopped chili segments, and finally season them, and heat up the sauce.

Add chicken essence and collect the moisture.
