Braised Duck Meat

I bought half duck, chopped into pieces and soaked in water for a while.

Add a spoonful of cooking wine to the washed duck meat in a pot under cold water, and boil the water for two minutes.

After blanching the duck meat, clean the blood floating powder with water, and then drain the water.

The potatoes are peeled and sliced on a hob.

Put a little oil in the pot, add the duck meat to the hot oil and stir fry, force the oil out, and fry until the duck meat turns golden brown.

Put the duck meat out, leave a little base oil in the pot, add sliced ginger, star anise, pepper, and a little bean paste to stir-fry the red oil.

Pour in the fried duck meat and stir fry, add two spoons of light soy sauce, two spoons of cooking wine, appropriate amount of salt, one spoon of sugar, stir fry a few times, add boiling water to the duck meat, cover and simmer for ten minutes.

Add the prepared potatoes and carrots, cover and simmer for five minutes, collect the juice over high heat
