Duck Blood Vermicelli Soup

Ingredients: 1 duck, 50g duck blood, 100g vermicelli, 50g duck liver, 50g duck intestines, 50g duck gizzards, 2g coriander, 1g white pepper, 1 green onion, 20g oily tofu, 2 grams of vinegar, 1 gram of salt, 1 gram of spicy oil, 3 grams of mustard, 3 slices of ginger, 3 slices of bay leaves, 1 gram of star anise, 1 piece of cinnamon, 3 grams of white pepper

Add water to the pot, add duck, green onions, star anise, cinnamon, bay leaves, white pepper, and boil, skim the foam, simmer for 2 hours on low heat, and filter out the broth.

Add the boiled stock to the pot, add the oily tofu and duck gizzards and cook for 20 minutes, add the duck liver, duck intestines and duck blood and cook for 2 minutes
