Braised Lobster

A. Remove the big feet of the lobster (you can also keep it), clean it with a brush, remove the head shell, pinch the middle of the tail to remove the shrimp intestines, and finally cut the back of the shrimp with scissors to make it easier to eat.
B. Sprinkle flour or starch into the lobster, and then wash it with your hands. Because the lobster will be very dirty, it is better to use flour or the like to get rid of the dirt.

Shallots, garlic, chili, 2 star anise, a few peppers, knotted shallots, and a small handful of leeks. (The leeks are still available at home, so they are used as ingredients.)

Put oil in the pot, put a little garlic and ginger; put the star anise and pepper.

Pour in the lobster and stir fry until the color changes.

Add light soy sauce, vinegar, and water.

Add the remaining garlic, ginger, and green onion knots. Add the leeks when they are left in the pan.

I put a little hot sauce again. Add appropriate amount of salt to make it a little saltier and more delicious.

Cover the pot and cook for 7-8 minutes. Because I am afraid of parasites, I add more water.

When the pan is about to rise, add the leeks.

Out of the pot, sprinkle in the chopped green onions.
Tips:
1. Wear gloves when handling shrimps to prevent them from being caught. Originally I wanted to take a picture when I took it down, but it was not convenient to take it. Only the finished picture was taken.
2. It will be better to add flour or starch to remove dirt when washing.
3. Burn for a while to kill the imaginary parasites.
4. Add salt and chili according to your taste. Personally, I think a bit spicy and salty is more suitable for lobster.
5. No matter how dirty the lobster is, it will definitely be cleaner than the food stall~~
