Braised Noodles with Pork Ribs

Knead the flour, salt, egg and water to form a smooth dough, cover it with plastic wrap, let it rest for 15 minutes, and make hand-rolled noodles for later use.

Soak the peppercorns in heated water for 10 minutes, wash and cut lettuce, mushrooms, potatoes and peppers.

Chop small ribs into small pieces, heat the oil in the pan, add ginger slices to fragrant, add the ribs and fry together. After the ribs change color, add cooking wine and braised soy sauce, stir-fry, add water, cover the pot and simmer for about 30 minutes.

Then add lettuce, mushrooms, potatoes and peppers, add salt and water and continue to simmer.

After the dishes in the pot are cooked, spread the noodles on top of the dishes. Cover the pot and simmer for 5 minutes.

Add vinegar and monosodium glutamate to the pepper water and mix thoroughly, pour it into the noodles, stir-fry evenly, and sprinkle with green onions.
Tips:
After the noodles are cooked, you can add some chili peppers according to your taste.
