Braised Octopus

Wash the purchased hairtail and remove the head and tail. Scrape the fish scales with a steel wire ball.

After scraping the fish scales, be sure to clean the inside and remove the black film so that the fish will not be fishy.

Dry the water, add green onion, ginger, white wine, pepper and thirteen spice salt to marinate for about 20 minutes.

Wrap it in egg batter and fry it until golden brown (the egg batter is an egg with a little flour, starch is fine) I only put eggs and flour.

Fry in the pan until the shape is golden and remove.

I only put in egg liquid, starch and flour, and the color may be slightly worse.

Put the green onion, ginger, garlic, pepper, aniseed chili and bay leaves in a small bowl.

Start the pot and cook the oil, and pour in the prepared condiments (I just remembered that there was no garlic when I was out of the pot, I always felt that it almost tasted 😂).

Pour the fish into the pot and cook the vinegar, then pour the dark soy sauce or soy sauce.

Mix in an appropriate amount of water, add sugar, and simmer for about ten minutes in a salty saucepan.

Simmer for about ten minutes, the soup becomes less and thicker, remove the lid to collect the soup.

Out of the pot, it's not bad.
Tips:
1. When choosing hairtail, you must not buy soft stalks, but elastic ones. If it’s a frozen hairtail, just look at your eyes and buy one with yellow eyes and intact scales on the body.
2. Scrape the fish scales and wash the black film to keep the fish from being fishy.
3. When marinating the octopus, you can also put cooking wine or rice wine.
