Braised Octopus

After removing the scales and cleaning the octopus, pour it in the cooking wine, put the green onion, ginger shreds and salt, and pickle it overnight in plastic wrap. Of course, you can pickle it for two hours if you are in a hurry.

Pour the oil into the pot and heat it up, put in the octopus wrapped in egg batter (egg + starch) and start frying. It is strongly recommended to use a non-stick pan. At first I thought that an iron pan would be fine. The mother-in-law said The problem was discovered after frying two pieces. It was a wrong choice at first, so I had to change the pot halfway.

Prepare green onion, ginger and garlic slices.

Leave the bottom oil in the pot and add the sugar to boil the color.

Add light soy sauce, dark soy sauce, salt, chicken essence, vinegar, add appropriate amount of water and boil.
