Stir-fried Octopus with Sesame Pepper

Hairtail cures the net.

Prepare spices.

Crush the pepper, star anise, fennel, grass fruit, nutmeg and garlic together with a food processor.

Cut the hairtail into sections.

Add pure water to the crushed seasonings and add chili noodles.

Put salt.

Put chicken noodles.

Pour the cooking wine and stir well into the garlic marinade sauce.

The processed hairtail is marinated in the marinade for 1.5 hours to 2 hours.

Rinse the marinated octopus into the marinade.

Prepare flavor sauce (sugar, salt, vinegar, light soy sauce and water), garlic diced and sesame pepper.

Hairtail pat corn starch.

Fry in 70% hot oil.

Remove the oil when it is golden yellow and mature.

Leave the oil in the bottom of the pot, add garlic and pepper to fry until fragrant, add the octopus and stir well.

Cook the sauce, drizzle pepper oil and serve.
Tips:
1. Do not marinate the hairtail for too long, otherwise it will affect the taste.
2. When frying octopus, the oil temperature should not be too high, otherwise it will be easy to fry black.
