Braised Octopus

Remove the head and internal organs of the hairtail and cut into sections, using two cuts on both sides.

Add 1 spoon of salt, cooking wine, light soy sauce, ginger and minced garlic.

Mix well and marinate for 20 minutes.

Add starch and flour and mix well.

Heat oil in a pot, put in dry wooden chopsticks when there is a small bubbling around, add the octopus and fry it until golden on both sides, then remove.

Add 1 tablespoon of vegetable oil to the pot, add sliced green onion, ginger, garlic, star anise and dried red pepper and saute until fragrant.
7.
Add the octopus and stir well.

Add sugar, 1 tablespoon of salt, organic vinegar, dark soy sauce and appropriate amount of water, and cook until the soup is thickened and then sprinkle with chopped green onion.
