Braised Open Back Shrimp in Oil

Wash the live shrimp, trim off the long hairs and calves

Open back to shrimp line

Cut the green onion, ginger, garlic and set aside

Add oil to the hot pan, first saute the minced garlic on low heat, then add the green onion and ginger until fragrant

Change to medium heat, add shrimp, add sugar, cooking wine, balsamic vinegar, light soy sauce, stir fry evenly, cover the pot and simmer

Simmer until the color changes. The soup is thick and seasoned with a proper amount of salt. Just a little sesame oil and it can be served.
